Landscapes were some of the first images produced by photographers. 
The early cameras were huge and needed long exposure times
because the films, or plates, were extremely slow by today's standards. 
Sunlight and large spaces were therefore a perfect combination. 
There were no color films, either, of course. 

The lack of color forces one to focus on shapes, textures, geometry,
and other aspects of the image, which is a challenge.  
Many of today's
famous photographers still do a lot of work in monochrome. 
Ansel Adams was a renowned landscape photographer whose work was done primarily in black and white. 

Color is usually preferred by most people, however, and to satisfy the tremendous demand
there are thousands of exquisite images being produced daily by photographers.
